Breakfast is my favourite meal of the day!


I’m not an oatmeal fan but I love Steel Cut Oats so what I typically do is I melt a tablespoon of peanut butter and mix 1/4 cup of oats into it and add toppings


Sometime I will heat up the oats with two table spoons of coconut milk to soften them a little first. Plus it’s great in the winter!


I also absolutely love yogurt. I used to eat Greek yogurt almost every day but now that i am dairy free I’ve found coconut yogurt.

When use the yogurt as my base it is always plain so I usually add flavour to it such as as tbsp of:

Cocoa

Honey

Maple syrup

Peanut butter*

**FYI when I say peanut butter I mean natural peanut butter, not the processed sugar filled stuff!**


On the weekends we like to cook protein pancakes if we have time and have a big breakfast as a family because our lives are so busy and it’s one of our favourite things to do to have a slow morning and enjoy each other.



Zucchini Muffins:

1.5 cups oat flour

1.5 cup coconut flour

1 tsp salt

1 tsp baking powder

1 tsp baking soda

2 eggs

1 Tbsp vanilla

3/4 cup honey

1/4 cup coconut oil

2 tsp cinnamon

1.5 cups milk

1 cup grated zucchini

Mix wet together, then dry and combine.

Spoon into muffin tin lined with muffin wrappers.

Bake at 350F for 30 minutes or until starting to brown and a toothpick comes out clean.
