This is my favourite meal ever!

I'll likely be adding more to this as I go but for now I wanted to post these... I love yogurt but thanks to my stomach I'm unable to eat dairy anymore so I buy Daiya coconut yogurt. It's available in the health food section of the grocery store!

I love oats as well!

I do not like oatmeal, it's too mushy for my liking so I usually just add Steel Cut Oats to my yogurt or I warm up some peanut butter and stir oats into that. I have put 2 Tbsp of coconut milk into my oats and heated them up - they're softened but not too soft, great for colder months!

I only use 1/4 cup of oats each time, that's enough to satisfy!


When use the yogurt as my base it is always plain so I usually add flavour to it such as as tbsp of:

Cocoa

Honey

Maple syrup

Peanut butter*


**FYI when I say peanut butter I mean natural peanut butter, not the processed sugar filled stuff!**



Yogurt, Oats, strawberries, honey, hemp seeds and peanut butter

Oats with PB and banana

Yogurt, oats, cocoa, strawberries and almonds




Zucchini Muffins:


1.5 cups oat flour

1.5 cup coconut flour

1 tsp salt

1 tsp baking powder

1 tsp baking soda

2 eggs

1 Tbsp vanilla

3/4 cup honey

1/4 cup coconut oil

2 tsp cinnamon

1.5 cups milk

1 cup grated zucchini

Mix wet together, then dry and combine.

Spoon into muffin tin lined with muffin wrappers.

Bake at 350F for 30 minutes or until starting to brown and a toothpick comes out clean.
